The spice is the dried herb of marjoram, collected during the flowering period. This plant comes from the Middle East and is grown almost all over the world. Marjoram herb is a typical spice of Mediterranean countries. The spice has a characteristic aroma and slightly burning taste.

In Polish cuisine it is mostly used in making home-made smoked meats, seasoning meat dishes, sauces, roasts, stuffings, pates, vegetables, soups (pea, bean, potato, eel, sour soup, tripe), kolduny and mushroom dishes. To enrich its aroma, marjoram is often used together with thyme, especially when a salt-free diet is required.

The use of marjoram depends on the type of dish. Meats and sausages are seasoned before roasting or cooking, others at the final stage of preparation.
