However, the most important role is played by the method of plum stoning, which guarantees juiciness of dried fruit. In the highest quality dried plums, the stone is removed through only one puncture. This allows to preserve the valuable flesh, the firmness of a fresh plum and the full nutritional value even after drying. Thanks to this, dried plum fruits also keep their oval, uniform shape.
